We had an awesome time last night; Tara came over and cooked for us.  That was a real special treat.  It was like having a fancy restaurant come to you.  She made this really neat Greek dish called Afilia or something close to that.  Basically, it is pork and onion stew cooked in half a bottle of wine.  OMG!!!  I was having mouth-gasms.  For a side dish she made some penne pasta then sauted it in olive oil with squash and zuccini.  I thought such a wonderful meal deserved a nice bread so I made some fresh italian herb bread in the bread maker.  I thought it went really well with the rest of the meal.  For desert she made iced blood oranges.  OMG!!!  OMG!!!  Wow is about all I can say.

Tonight she and her son are going to come over for dinner and I am going to cook.  I  thought about making stuffed cabbage at first, then realized I hadn't made stuffed bell peppers in a while and I really like stuffed bell peppers. I also usually have enough left over stuffing to put in tortilla wraps later on.  There is left over uncooked squash and zuccini that I'm going to saute up as well.

Not sure what I'm going to make for desert, though.  I don't think anything can compare with iced blood oranges.

John will probably be cooking soon and he is a fantastic cook.  It is so cool to have found someone to hang out and cook with again.  I've been really missing that.  We really like to cook.  I wonder if we still have red fish in the freezer.  John makes the best blackend red fish on the grill, but we have to replace the burners before we can use the big grill again and we are having trouble finding them.

Anyone have any good desert ideas that aren't too hard to make?  Fruit based is good.
